Well, I buried some old potatoes in the compost pile, and now I have happy little potato plants! I've never grown potatoes before. Several plants have come up in each location. Do I leave them alone, or thin to one plant?

Do not thin, pull dirt or in your case compost up around the stems. After the blooms die you can reach in and pull out some "new potatoes" (just little ones), they are very tender and go good in a pot of beans. When the while stem dies out you can dig out the hills and the bounty.

pull it up to the bottoms of the leaves. When the plant grows up some more pull more dirt up to it. This keeps the soil around the plant loose so the tubers can grow.
