Company Mashed Potatoes

15 medium sized potatoes
1 cup sour cream
1 small onion, diced fine
8 ounce pkg. cream cheese, softened
1 tsp. salt
¼ to ½ tsp. pepper, according to your taste
1 to 2 cups buttermilk
¼ to ½ cup crisp bacon, crumbled
2 TBSP. chopped chives, optional
1 cup grated Colby or cheddar cheese
1 stick butter or margarine, cut into 8 slices

Peel and quarter potatoes. Place in enough water to cover them and bring to a boil for 8 to 10 minutes. Test the potatoes by inserting a fork into a quarter. If it slides in easily, remove , drain and mash the potatoes. Place potatoes and all the other ingredients in a mixer, except for the cheese and half the butter and mix thoroughly. Place in a crock pot and cook on low for 2 hours until heated through and through. Add the remaining butter on top and allow to melt. 10 minutes before serving, stir in melted butter and then sprinkle with the cheese.

Makes 10 to 12 servings.

Suggestions: use half the buttermilk when mixing and slowly add just enough to keep the mixture creamy.
