what is cream of tart?
it is an ingredient used to make fondant to feed the bees..I dont know what it exactly does to the fondant, but I use it non the less..lol..I guess now I should google and find out what it actually does to the fondant...but its cream of tartar...
you find Cream of Tartar on the spice aisle. If you make wine or mead it is the dried dregs after the wine or mead is decanted, then purified. It is extremely acidic and changes the pH of fondant candy for the bees into an easy to digest form more efficiently than other acids.
white table sugar is sucrose, the cream of tartar inverts the sucrose into glucose and fructose , which is easier for the bees to digest, it will also keep your sugar syrup from crystalizing when temp get cold
