I made a few calls to some bow hunters yesterday telling them I was ready for some meat. This evening a pickup drives in the driveway with a young spike buck in the back. I don't even know who he was. He just said "Grandpa said you wanted some deer". So I've been skinning for the last hour. Now have it packed in ice to cure.

Walt, I don't think it's the ranchers you want to call. In Texas, if you want free beef, you need to call the rustlers or city dwelling deer hunters.

I just got up from a table of fresh bar-b-que venison ribs. Man, were they good.

Got the back straps sliced and marinating. I'll put them in the dryer tomorrow and have jerky by tomorrow night.

did you use both back straps? how big of a batch did you end up making?
