Irish Sponge Cake

    I served this last night at a family gathering. This is the first time I had made it and I will be making it again. It's so easy and has only 4 ingredients.

    Irish Sponge Cake

    4 eggs, seperated
    1 1/4 cup sugar seperated
    1 tsp vanilla
    1 cup cake flour

    Spray a bundt pan with non stick spray. Sprinkle in 3 T of granulated sugar to coat the pan. (This will make a crust and make the cake come out of the pan easily.)
    Separate eggs. Beat the whites until stiff. Mix in 1/2 cup of sugar and then set aside.
    Beat yolks until mixed. Add 1/2 cup of sugar and beat for 5 minutes.
    Combine the egg mixes with 1 tsp vanilla.
    Fold in the 1 cup of cake flour.
    Pour into bundt pan. Sprinkle the remaining 1 T of sugar over the top of the batter. Bake at 350 degrees for 30 minutes.
    When cool, turn cake out on to a serving plate.

    I filled the center with fresh black berries to serve and had whipped cream available.
