Pastry for single or double crust pie as desired. 4-5 c peeled, seeded zucchini 1 c white sugar 1 t cinnamon pinch salt 1/4 t allspice 1/4 c brown sugar 1/4 t nutmeg 1 1/2 t cream of tartar 2 T cornstarch or flour Slice zucchini like you would an apple. cover with boiling water, boil 2 minutes; drain and set aside until cool. Mix dry ingredients. Gently toss with the cooled zucchini. Place into unbaked pie shell, add top crust (if desired), crimp edge and vent. Bake at 400 for 10 minutes, turn down to 350 for 20 minutes or until crust is golden and filling is bubbly. We made this for a friend of ours who LOVES apple pie and swears he hates zucchini. He ate two whole pieces and was on the third before my husband told him it was zucchini.... he smiled and kept right on eating!
