We don't have a category for side dish so I thought this was the most appropriate place.
It won't be long now before we are eating fresh corn and ripe tomatoes. I found this recipe in a magazine, tried it and really liked it. It calls for frozen corn, but corn cut off the cob would be even better.

Peppered Corn Salad

1 16oz package frozen corn
2 medium tomatoes, chopped
4 green onion, chopped
1/2 cup chopped green pepper
2 T canola oil
1 T white vinegar
2 tsp minced fresh parsley
1/2 tsp salt
1/2 tsp lemon juice
1/4 tsp sugar
1/4 tsp dried basil
1/8 tsp crushed red pepper flakes

Prepare corn according to package directions, drain and set aside. In a large bowl, combine the tomatoes, onions and green pepper; stir in corn. In a small bowl, combine the remaining ingredients; pour over salad and toss to coat. Chill until serving.
